Just a short post for you today..
Terry and I went up to the farm on Monday and had another nice stay..
It rained here in New Brunswick for a few days and it was quite cool..
I thought I would just post a few pics of one of those rainy evenings in the old farm house..
The rain was pattering against the windows and you could hear the wind around the chimney...
But the fire was lit and the kettle was humming out in the old porch room..
Supper was cooking..
One of our favourite casseroles was in the oven..
Chicken and mushrooms with rice and another pot of our lovely Spring fiddleheads were simmering away..
Terry was reading a few farm magazines as I set the table and finished getting the meal ready..
My Mom was wondering why we love it up there so much but it is hard to explain..
I told her it was like the place calls our name and away we go.. grin..
It sounds rather dreary, I suppose especially in places where there is lots of sun and heat but we are having a weird Spring here..
Oh well... At least it is not snow.. smile..
And the next week is to be much warmer...
We are enjoying the few days a week that we have been able to go to the farm..
Next week we shall we heading to the cottage and getting it ready for us for Summer..
Love the Bay of Fundy but we love the old farm place, too..
Next post, I will show you a bit more of our activities there..
Before I close I wanted to include this link for info about our fiddleheads as several were wondering about them last post.

I believe they only grow in certain parts of the world..
And one has to make sure that they are the proper fern or else they are poisonous..
We are happy that they are found here.. smile.

And I think I should give you the recipe for the casserole although I hoped to link to one but couldn't find any..
So ...
Chicken and Rice..
In a frying pan with a tablespoon of oil brown as much chicken pieces as needed for your family...
Heat oven to 350 degrees F..
In a casserole dish place 1 1/2 cups of raw rice on the bottom..
Add a chopped onion and 2 chopped stalks of celery and 1 can of drained mushroom slices, salt, pepper, 1 clove of crushed garlic and a bit of parsley...
In a large measuring cup or bowl whisk together 1 can of cream of mushroom soup and 3 cups of chicken stock..
Pour over top of rice mixture and stir..
After the chicken is browned on all sides then place on top of rice..
Cover and bake for 1 hour or until your rice is tender..
Check after half an hour to make sure there is enough liquid..
If not then just add more chicken stock...
This is lots for 4 people..
I had about half left and made this the next day with the leftovers..
Chicken and Rice Casserole Soup..
Just place the leftover casserole and chicken pieces in a pot along with the rest of the chicken broth and/or water...
Add a chopped carrot or two, a bay leaf, chopped parsley, a bit of thyme and salt and pepper..
I added a piece of lovage...
Then I just let it simmer on the wood stove for an hour or so but you can simmer it on the stove for probably a half hour...
A nice salad and bread and you have another meal..
